Chicken & Shrimp Pasta Salad
Salads and Sandwiches
INGREDIENTS
1 cup
Gerber’s Amish Farm Chicken, cooked and cut into bite-sized pieces
1 package (8 ounces)
corkscrew pasta
1
garlic clove, crushed
1 tablespoon
cooking oil
1 pound
fresh asparagus, cut into 1-1/2” pieces.
1/2 pound
shrimp, peeled and deveined
2 tablespoons
water
1 can (8 ounces)
sliced water chestnuts, drained or 1 cup celery
1/3 cup
peas
Dressing:
6 tablespoons
vegetable oil
2 tablespoons
white wine vinegar
1 teaspoon
soy sauce
1/8 teaspoon
pepper
1/8 teaspoon
dry mustard

Cook pasta according to package directions. Meanwhile, in a large skillet, sauté garlic in oil over medium-high heat for 1-2 minutes.

Add asparagus, shrimp and water; cook until asparagus is crisp-tender and shrimp are cooked, about 8 minutes.

Stir in Gerber’s Chicken, olives and water chestnuts or celery.

Remove from heat. Drain pasta and place in a large bowl; add asparagus mixture.

Combine dressing ingredients; pour over salad and toss.

Cool before serving. This dish may be served hot. If serving hot, prepare salad ingredients and cover with foil while preparing dressing ingredients, then pour dressing mixture over prepared ingredients and serve immediately.
