Chicken Enchiladas

INGREDIENTS
1 pound
Gerber’s Amish Farm Chicken Breasts, cut in small pieces

red pepper

green pepper
1/2 cup
onion
2 cups
low fat refried beans
10 ounces
mild enchilada sauce
8 ounces
tomato sauce
8
tortillas
3/4 cup
cheddar cheese
Directions

Cook Gerber’s Chicken for 2 minutes.

Add peppers and onions. Stir fry 3-4 minutes more.

Remove from heat. Stir in beans.

Mix together tomato sauce and enchilada sauce.

Spoon 2 tablespoons in bottom of 9” x 13” greased dish.

Place 1/2 cup filling in tortillas and roll.

Pour sauce over shells. Cover and bake 30 to 40 minutes at 350 F.

Sprinkle with cheese.

Let stand about 5 minutes.

Serve with low fat sour cream.
