INGREDIENTS

2 cups diced

Gerber's Amish Chicken Boneless Skinless Chicken Breasts cooked

1 bunch

Watercress (stems removed)

1 can ( 11 ounces)

Mandarin Oranges (chilled and drained)

1/2 cup coarsely chopped

Pecans

2 sliced

Scallions

6 tablespoons for dressing

Olive Oil

2 tablespoons for dressing

Rasperry or Red Wine Vinegar

1/2 teaspoon

Salt

1/4 teaspoon

Pepper

Preheat Oven to 325 degrees. Spread out pecans on a small baking sheet. Bake in oven for 10-15 minutes, until lighlty toasted.

In a salad bowl, combine chicken, watercress, oranges, scallions, and toasted pecans. drizzle on oil, vinegar, salt and pepeer. toss to coat.
